Wojcech Modest-Amaro

Wojcech Modest-Amaro cut his teeth working at El Bulli and Noma, learning how to take ultra-local food and do something extraordinary with it. He then returned to his native Poland to apply the same philosophy. At Atelier Amaro, his Michelin-starred restaurant in Warsaw, guests can expect intricate dishes such as snails and white asparagus with larch needles in a jar full of smoke, and hay, lard and cauliflower served on a staircase cut into a small log. Modest-Amaro is also the founder of the Forgotten Fields Foundation, an organisation devoted to reviving forgotten ingredients.
